Grilled Fennel + Lemon

There's little that tastes more like summer than grilled goods and simple food.  In Italy, they grill fennel to bring out its natural sweetness, we grill it because it tastes even more like California.  To round things out, we added sliced cucumbers and lemons to the coals and discovered a Mediterranean inspired meal that's light, fresh, and perfect when paired with grains, greens, friends, and fading sun.  

  

                            Grilled Fennel
                            1 - 2 bulbs Fennel, quartered
                            Olive Oil, to brush on
                            Sea Salt
                            Freshly Ground Black Pepper
                            Optional: Hearty fresh herbs, like Rosemary or Thyme
                            Brush fennel with olive oil, season with salt and pepper to taste.  
                            Place on a hot grill for 4 - 5 minutes, or until grill marks appear.  Rotate.

  

                            Grilled Lemons
                            2 Lemons, halved
                            Olive Oil, to brush on
                            Sea Salt 
                            Freshly Ground Black Pepper
                            Optional: Finely chopped Rosemary
                            Brush cut side of lemons with olive oil, season with salt and pepper.
                            Place on a hot grill, cut side down, for 3 - 4 minutes.  Turn and continue to grill for 2 - 3 minutes.

                            How to use: Squeeze on top of anything, or use with grilled garlic to make a smoky salad dressing.
